Storing Pāua

Whole Pāua:

  • Keep pāua in the fridge, unshucked, for up to 48 hours. Store them in a cool, damp environment, like on a tray covered with a damp tea towel or in an airtight container.

Shucked Pāua:

  • If you’ve already removed the meat, clean, pat dry and place it in an airtight container and refrigerate for up to 2 days.

  • For longer storage, pāua meat freezes well. Mince, vaccum seal and freeze or if you want to keep whole - wrap it tightly to avoid freezer burn and store it for up to 3 months.
