keeping crays fresh

If you want to eat your fish at a later date, here’s what we like to do extend their shelf life*

Once delivered, quickly remove them from their box and place them in the fridge.
The same, or the following day you have a couple of options:

1. BOIL

Boil the same day they arrive. Once boiling your crays, they should last in the fridge for up to 4 days. You can either serve them cold, or cut in half and BBQ them on Christmas day. If going for the boil & BBQ option, just be sure to get them up to temperature to kill any potential bacteria. Please see the boiling instructions on our blog and note that draining them once boiled is very important.

2. FREEZE

Freezing them whole is best to do if you are wanting to BBQ them at a later date. If you wish to serve boiled - boil, then freeze. If you have ordered your crays for an earlier delivery - we recommend you either freeze them whole (this is best to do if you are going to BBQ them). If you wish to serve boiled crayfish, the best option is to boil them and then freeze them - as this preserves the quality and texture of the meat. When ready to serve, pull them out of the freezer & refrigerate the night before, ready to enjoy when Easy!

3. TAIL THEM

This is best to do as soon as the fish have passed away. It means removing the tail from the body, also the tube from inside the tail in order to preserve the meat from being tainted by the gut. Twist the tail removing it from the body, then cut it in half to remove the tube that runs down the middle. Cover, and refrigerate. (Be sure to freeze the head/body/shell to use to make stock or cray oil!)


Please remember the fish is coming straight from the sea, it was in the ocean the day before it was delivered, so it is fresh as you can get!
