KEEPING PĀUA COOL

There are a few things you can to do ensure that your pāua are looking their best on the big day.

Once delivered, quickly remove them from their box and place them in the fridge.
The following day you have a couple of options:

1. Shuck them.
Remove the pāua from their shell, removing all of the gut, including the teeth. Wash, cover or vacuum-pack and refrigerate. Remove any excess water daily. They should last up to three days in the fridge once delivered. See instructions here.

2. Freeze them.
You can either freeze the pāua whole, which actually helps tenderize the meat. However, we find it's easier to get the Mahi done first by shucking them before freezing to ensure less work on the big day! See instructions here.

3. Mince.
Once minced, seal or vacuum pack & leave in the fridge, or freeze.
