PĀUA sliders

In the realm of culinary adventures, there's a special joy in wild cooking—a term we use to describe the art of infusing your creations with ingredients you love, embracing the untamed spirit of your personal taste!

Ingredients:

- 5 fresh pāua, cleaned and minced

- 1 - 2 eggs

- Sprinkle of flour

- 1 onion, finely chopped

- 2-4 cloves garlic, minced

- Handful of fresh herbs (e.g., parsley, chives, or coriander), finely chopped

- Fresh Chilli (optional)

- Slider buns

- Best Foods Mayo

- Rocket or other fresh greens

- Salt and pepper to taste

- Lemon wedges for serving

Instructions:

1. Prepare the Pāua:

Ensure the pāua is cleaned thoroughly and finely minced.

2. Create the Mix:

In a mixing bowl, whisk one egg and add the minced pāua, a sprinkle of flour, chopped onion, garlic, chilli, and a generous handful of finely chopped fresh herbs. Feel free to adjust the flour or egg to achieve the desired consistency—this is where your wild cooking magic comes into play!

Season with salt and pepper.

3. Fry the Fritters:

Heat the pan and add butter or oil. Spoon portions of the mixture into the pan to form individual fritters. Cook for around 2-3 minutes on each side or until golden brown and cooked through.

4. Serve:

Squeeze a little lemon over the fritters and sprinkle sea salt. Place the Pāua Fritters between soft slider buns with mayo, rocket, and your choice of hot sauce!
