Herby PĀUA skewers

Herby BBQ Pāua Skewers

Ingredients:

- 3 - 5 Fresh Pāua
- 5 cloves of garlic (or more), minced
- 1/4 cup fresh parsley, finely chopped
- 1/4 cup fresh coriander, finely chopped
- 1/4 cup fresh chives, finely chopped
- 1/4 cup good quality olive oil
- 2 lemons (1 for juicing one for serving)
- Salt and pepper to taste
- Chilli flakes if you’re inclined

Instructions:

1. Prep the Pāua: Shuck, clean and tenderise the Pāua. To do this, remove the Pāua from its shell and discard the hua. Rinse, and use a mallet to gently pound it to tenderise it. Slice the Pāua width-ways.

2. Prepare the Marinade: In a bowl, combine the minced garlic, fresh herbs (parsley, coriander, chives), olive oil, lemon juice, salt, and pepper. Mix well.

3. Marinate the Pāua: Place the Pāua pieces in a re-usable plastic bag or a bowl and pour the marinade over them. Seal the bag or cover the bowl and let the Pāua marinate in the refrigerator for at least 30 minutes.

4. Preheat the BBQ: Preheat your barbecue to medium-high heat. You can also use a grill pan on the stovetop if you don't have access to a BBQ.

5. Grill the Pāua: Remove the Pāua from the marinade and thread them onto skewers. Grill the Pāua pieces for about 2-3 minutes on each side or until they're tender and slightly charred. Be careful not to overcook!

6. Serve: Transfer the grilled Pāua to a serving platter and drizzle any remaining marinade over them. Garnish with extra fresh herbs and chilli flakes if desired. Serve immediately with a side of lemon wedges and a glass of cold white wine! We recommend Huntress Waikoa.
